Cheesecake Ingredients

Method

Directions

  1. 1

    Prepare the Crust

Preheat the oven to 350°F (175°C). In a food processor, pulse the macadamia nuts until finely ground. In a bowl, mix ground macadamia nuts, melted butter, sugar, flour, and salt until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10-12 minutes until golden. Let cool.

  2. 2

    Make the Cheesecake Filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and mix until well combined. Add sour cream, eggs one at a time, and vanilla extract. Mix until just combined, avoiding overmixing.

  3. 3

    Bake the Cheesecake

Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour. Then refrigerate for at least 4 hours or overnight.

  4. 4

    Prepare the Sauce

In a saucepan, combine fresh raspberries or lilikoi puree, sugar, and water. Cook over medium heat until the mixture boils and thickens slightly. Remove from heat and let cool. Strain if desired.

  5. 5

    Serve

Slice the chilled cheesecake and drizzle with raspberry or lilikoi sauce before serving.
