Prepare the Shrimp
In a medium bowl, toss the shrimp with chili sauce until well coated. Set aside to marinate for about 15 minutes.

Cook the Shrimp
Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 3-4 minutes, or until they turn pink and are cooked through. Remove from heat.

Make the Asian Slaw
In a large bowl, combine the shredded cabbage, julienned carrots, and chopped green onions. In a separate small bowl, whisk together rice vinegar, sesame oil, salt, and pepper. Pour the dressing over the slaw and toss to coat.

Assemble the Nachos
On a large baking sheet, spread the mondu chips evenly. Top with the cooked shrimp, shredded smoked mozzarella, and dollops of salsa. Bake in a preheated oven at 350°F (175°C) for about 10 minutes until the cheese is melted.

Remove from the oven and top with the Asian slaw. Serve immediately and enjoy!
