Prepare the Vegetables
Wash all vegetables thoroughly. Chop the zucchini and bell peppers into bite-sized pieces, halve the cherry tomatoes, and slice the carrots into thin rounds.
Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the carrots first and sauté for about 3-4 minutes until they begin to soften.
Add Remaining Vegetables
Add the zucchini, bell peppers, and cherry tomatoes to the skillet. Continue to sauté for an additional 5-7 minutes, or until all vegetables are tender.
Add Spinach
Stir in the spinach and cook for another 2-3 minutes until wilted. Season with salt and pepper to taste.
Serve
Remove from heat and serve warm as a side dish or over a bed of quinoa or rice for a complete meal.
