Preparing the Duck

    Score the Skin

    Using a sharp knife, score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat.

    Season the Duck

    Rub the duck breasts with salt and black pepper on both sides.

    Sear the Duck

    Place the duck breasts skin-side down in a cold skillet. Turn the heat to medium and cook for about 6-8 minutes, allowing the fat to render and the skin to become crispy. Flip the breasts and cook for another 3-4 minutes until the internal temperature reaches 135°F (57°C) for medium-rare.

    Remove the duck from the skillet and let it rest for 5 minutes before slicing.

Preparing the Sauce

    In the same skillet, drain excess fat, leaving about a tablespoon. Add chopped shallots and sauté until translucent.
