Method

Preparing the pastry

1

Make the pastry

In a bowl, combine the flour and salt. Add the cold, diced butter and mix until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough comes together. Form into a disc, wrap in plastic, and refrigerate for at least 30 minutes.

2

Roll out the pastry

Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the chilled pastry to fit your tart pan. Place the pastry in the pan, trimming any excess. Prick the bottom with a fork and blind bake for 15 minutes.

Preparing the filling

3

Cook the filling

Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until soft. Add the sliced mushrooms and thyme, cooking until the mushrooms are tender and any liquid has evaporated. Season with salt and pepper.

4

Mix the filling

In a mixing bowl, combine the cooked mushroom mixture with cream cheese, eggs, and milk. Mix until smooth and well incorporated.

5

Fill the tart

Pour the filling into the pre-baked pastry shell and spread it evenly. Bake in the oven for 30-35 minutes or until the filling is set and slightly golden on top.

Serving the tart

6

Cool and serve

Allow the tart to cool for a few minutes before slicing. Serve warm or at room temperature, garnished with fresh thyme if desired.
