Prepare the Lamb
Preheat your oven to 400°F (200°C). Pat the lamb sirloin dry with paper towels and place it on a cutting board.
Season the Lamb
In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the lamb sirloin, ensuring it is evenly coated.
Sear the Lamb
Heat a large oven-safe skillet over medium-high heat. Once hot, add the lamb sirloin and sear it for about 3-4 minutes on each side until browned.
Roast in the Oven
If using, pour the red wine into the skillet around the lamb. Transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium-rare, or until desired doneness is reached. Use a meat thermometer to check for an internal temperature of 135°F (57°C) for medium-rare.
Rest and Serve
Remove the lamb from the oven and let it rest for 10 minutes before slicing. Serve with your choice of sides.
