Prepare the Syrup

In a saucepan, combine water and sugar. Bring to a boil, then reduce heat and simmer for 10 minutes. Add lemon juice and let cool.

Prepare the Filling

In a bowl, mix together ricotta cheese, sugar, rose water, and chopped pistachios until well combined.

Prepare the Pastry

Preheat the oven to 350°F (175°C). Gently separate the kataifi dough and place it in a large bowl. Pour melted butter over the dough and mix well to coat evenly.

Assembly and Baking

Assemble the Konafa

In a greased baking dish, layer half of the buttered kataifi dough. Spread the ricotta filling evenly on top, then cover with the remaining kataifi dough.

Bake

Bake in the preheated oven for 30-40 minutes or until the top is golden brown.

Add the Syrup

Once baked, remove from oven and immediately pour the cooled syrup over the hot konafa. Allow to soak for at least 30 minutes before serving.
