    Cook the Couscous

    In a medium saucepan, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the Israeli couscous and cook for another 2-3 minutes until it starts to lightly toast.

    Pour in the vegetable broth, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 10-12 minutes until the couscous is tender and the liquid is absorbed.

Vegetable Medley Preparation

    Prepare Vegetables

    While the couscous is cooking, prepare the vegetable medley. In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, and parsley. Drizzle with lemon juice and toss to combine.

Final Assembly

    Once the couscous is cooked, fluff it with a fork and add it to the vegetable medley. Toss everything together until well combined. Adjust seasoning with additional salt and pepper if needed. Serve warm or at room temperature.
