Prepare the Brine
In a large pot, combine water, kosher salt, brown sugar, black peppercorns, crushed garlic, bay leaves, and thyme. Heat over medium heat, stirring until the salt and sugar are dissolved. Remove from heat and let cool completely.
Brine the Pork Loin
Once the brine is cool, submerge the pork loin in the brine solution. Cover and refrigerate for at least 12 hours, preferably 24 hours for maximum flavor.
Preheat the Oven
Preheat your oven to 350°F (175°C).
Prepare the Pork Loin for Roasting
Remove the pork loin from the brine, rinse it under cold water to remove excess salt, and pat it dry with paper towels. Optionally, season with additional herbs or spices if desired.
Roast the Pork Loin
Place the pork loin in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).
