Prepare the Lamb

Season the lamb shoulder with salt and black pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear the lamb on all sides until browned, about 5-7 minutes. Remove from pot and set aside.

Sauté Vegetables

In the same pot, add chopped onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.

Stir in the tomato paste and cook for 1-2 minutes. Then, pour in the red wine and scrape the bottom of the pot to release any browned bits.

Combine Ingredients

Return the lamb to the pot. Add beef broth, bay leaves, and rosemary. Bring to a simmer.

Braise the Lamb

Cover the pot and reduce heat to low. Let it braise for about 2 to 2.5 hours, or until the lamb is tender and easily pulls apart with a fork.
