Baked Shiitake Mushrooms

Preparation

    Prepare the Salmon

    Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt, black pepper, and lemon juice.

    Bake the Shiitake Mushrooms

    Preheat the oven to 375°F (190°C). In a baking dish, combine shiitake mushrooms, minced garlic, butter, thyme, salt, and black pepper. Bake for 20 minutes until tender.

    Cook the Shrimp and Grits

    In a saucepan, bring water to a boil. Stir in the blue corn grits and reduce heat to low. Cook for about 20 minutes, stirring occasionally until thickened. In a separate skillet, melt butter and sauté shrimp until pink and cooked through. Mix shrimp into the grits along with cheddar cheese, salt, and black pepper.

Grilling

    Grill the Salmon

    Place the seasoned salmon fillets on the grill, skin side down. Grill for 5-6 minutes on each side or until the salmon is cooked to your liking.

Plating

    Serve

    On each plate, place a portion of the blue corn grits topped with shrimp, a serving of baked shiitake mushrooms, and the grilled salmon. Garnish with organic micro greens.
