Foothills Shiitake Ragout

Grilled Asparagus

Method

Preparing the Beef Ribeye

  1. 1

    Seasoning

Rub the ribeye with olive oil, then season generously with salt, black pepper, and smoked paprika. Let it sit for 30 minutes to absorb the flavors.

  2. 2

    Grilling

Preheat your grill to high heat. Grill the ribeye for 4-5 minutes on each side for medium-rare. Use a meat thermometer to ensure an internal temperature of 130°F.

Making Potato Gratin

  1. 3

    Prepping Potatoes

Preheat the oven to 375°F. Slice the Yukon gold potatoes into thin rounds.

  2. 4

    Layering

In a greased baking dish, layer the sliced potatoes, minced garlic, salt, and pepper. Pour heavy cream over the layers, then top with Gruyère and Parmesan cheese.

  3. 5

    Baking

Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until golden and bubbly.

Making Black Garlic and Herb Butter

  1. 6

    Mixing Ingredients

In a bowl, combine the softened butter, black garlic, parsley, thyme, and lemon juice. Mix well until all ingredients are incorporated.

  2. 7

    Chilling

Transfer to parchment paper, roll into a log shape, and refrigerate until firm.

Preparing Foothills Shiitake Ragout

  1. 8

    Sautéing Vegetables

In a skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until softened.

  2. 9

    Cooking Mushrooms

Add sliced shiitake mushrooms and cook until browned. Pour in vegetable stock and simmer for 10 minutes.

Grilling Asparagus

  1. 10

    Seasoning

Toss the trimmed asparagus with olive oil, salt, and pepper.

  2. 11

    Grilling

Grill the asparagus for about 5-7 minutes until tender and slightly charred.

Frying Red Onions

  1. 12

    Coating Onions

Dredge the thinly sliced red onions in flour, ensuring they are evenly coated.

  2. 13

    Frying

In a deep skillet, heat vegetable oil and fry the onions until golden brown and crispy. Drain on paper towels and season with salt.
