Prepare the Sweet Potatoes
Preheat your oven to 425°F (220°C). Peel and cut the sweet potatoes into wedges. Toss them with a little olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.

Prepare the Snapper
Rinse the whole snapper under cold water and pat it dry with paper towels. Season the inside and outside of the fish with salt and black pepper.

Dredge the Snapper
Coat the snapper in all-purpose flour, shaking off any excess flour.

Fry the Snapper
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the snapper to the skillet. Fry for about 4-5 minutes on each side, or until the fish is golden brown and cooked through. Remove from the skillet and drain on paper towels.

Serve
Plate the fried snapper alongside the roasted sweet potatoes. Serve with grilled lemon halves and a side of house salad.
