Preparation Directions
1. Prepare the Spicy Aioli
In a bowl, mix together mayonnaise, sriracha sauce, and lime juice. Adjust seasoning to taste. Set aside.
2. Sear the Tuna
Heat olive oil in a skillet over high heat. Season the fresh tuna with salt and black pepper, then sear for about 1-2 minutes on each side, or until desired doneness. Remove from heat and slice thinly.
3. Fry the Tortillas
In the same skillet, add more oil if necessary and fry the corn tortillas until crispy, about 1-2 minutes per side. Drain on paper towels.
4. Assemble the Tostadas
Spread a layer of spicy aioli on each crispy tortilla. Top with sliced seared tuna, diced avocado, and a sprinkle of sesame seeds. Finish with crispy fried leeks on top.
5. Serve
Serve immediately while the tortillas are warm and crispy.
