    Prepare the Potatoes

    Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and set aside to cool.

    Blanch the Green Beans

    In a separate pot, blanch the green beans in boiling water for about 3-4 minutes until bright green and tender-crisp. Drain and immediately place in ice water to stop cooking.

    Soft Boil the Eggs

    In the same boiling water, gently add the eggs and cook for 6-7 minutes for soft-boiled eggs. Remove and place in ice water until cooled. Peel and set aside.

    Sear the Tuna

    Season the tuna filets with salt and black pepper. Heat a skillet over medium-high heat with a drizzle of olive oil. Sear the tuna for about 1-2 minutes per side for medium-rare. Remove from heat and slice.

    Prepare the Vinaigrette

    In a small bowl, whisk together the Dijon mustard, olive oil, red wine vinegar, salt, and black pepper to taste.

    Assemble the Salad

    In a large bowl, combine the romaine lettuce, arugula, blanched green beans, sliced baby potatoes, halved heirloom tomatoes, sliced red onion, and capers. Drizzle with the vinaigrette and toss gently.
