Prepare the Brine
In a large pot, combine water, kosher salt, brown sugar, black peppercorns, garlic powder, and paprika. Bring to a boil, stirring until salt and sugar dissolve. Remove from heat and let cool.

Brine the Chicken Wings
Once the brine has cooled, add the chicken wings to the pot. Ensure all wings are submerged in the brine. Cover and refrigerate for at least 4 hours or overnight for best results.

Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.

Bake the Wings
Remove the wings from the brine, rinse under cold water, and pat dry with paper towels. Arrange the wings on the wire rack in a single layer. Bake for 40-45 minutes until crispy and golden.

Toss in Buffalo Sauce
In a large bowl, toss the baked wings with buffalo sauce until thoroughly coated.

Serve the wings hot with blue cheese dressing, celery sticks, and carrot sticks on the side.
