    Prepare the Ingredients

    Rinse the salmon fillets and pat them dry with paper towels. Season with salt and black pepper on both sides.

    Sauté the Chorizo

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chorizo and cook until browned, about 5 minutes. Remove the chorizo from the skillet and set aside.

    Cook the Broccolini

    In the same skillet, add the broccolini and sauté for about 3-4 minutes until bright green and tender. Add minced garlic and sauté for another minute. Add the white beans and cooked chorizo back to the skillet. Stir to combine and heat through.

    Cook the Salmon

    In another skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the salmon fillets, skin side down, and cook for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for another 3-4 minutes, or until the desired doneness is reached.

    Make the Citrus White Wine Sauce

    In the skillet used for the chorizo, add the white wine, orange juice, and lemon juice. Bring to a simmer and let it reduce by half, about 3-5 minutes. Stir in the chopped parsley.

    Serve

    Plate the sautéed broccolini, white beans, and chorizo on each plate. Top with a salmon fillet and drizzle with the citrus white wine sauce.
