Directions
- 1
Cook the Rigatoni
Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
- 2
Prepare the Sauce
In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and crushed red pepper flakes. Sauté for about 1-2 minutes until fragrant.
- 3
Add Vodka
Carefully add the vodka to the skillet and let it simmer for about 3-5 minutes, allowing the alcohol to cook off.
- 4
Combine Ingredients
Stir in the heavy cream and tomato sauce. Mix well and let the sauce simmer for another 5 minutes. Season with salt and black pepper to taste.
- 5
Mix in Rigatoni
Add the cooked rigatoni to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water as needed to reach desired consistency.
- 6
Serve
Dish out the rigatoni onto plates, topping each serving with burrata cheese, halved heirloom cherry tomatoes, and diced fresh mozzarella. Garnish with fresh basil before serving.
