    Cook the Pappardelle

    In a large pot of boiling salted water, cook the pappardelle pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Prepare the Bolognese Sauce

    In a large skillet or saucepan, heat olive oil over medium heat. Add the chopped onion, carrot, celery, and garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Brown the Meat

    Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon, about 5-8 minutes.

    Add Tomatoes and Wine

    Stir in the crushed tomatoes, tomato paste, red wine, beef broth, oregano, salt, and black pepper. Bring to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for at least 30 minutes, stirring occasionally. If the sauce gets too thick, add some reserved pasta water to reach desired consistency.

    Combine Pasta and Sauce

    Add the cooked pappardelle to the sauce, tossing to coat the pasta well. Cook for an additional 2-3 minutes to heat through.

    Serve the pappardelle Bolognese hot, topped with grated Pecorino Romano cheese.
