Make the Dough
In a large bowl, mix together the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg and add water, one tablespoon at a time, until the dough comes together. Knead briefly until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

Assemble the Empanadas
Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a large cutter. Place a tablespoon of filling in the center of each circle. Fold the dough over and crimp the edges to seal. Place on a baking sheet lined with parchment paper.

Make Aji Sauce
In a small bowl, mix the Aji Amarillo paste, mayonnaise, and lime juice until smooth.

Make Chimichurri Crema
In another bowl, combine parsley, sour cream, minced garlic, red wine vinegar, olive oil, and salt. Mix well until creamy.
