Cilantro Rice

    Cook the Rice

    In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes until the rice is cooked. Remove from heat and let it sit for 5 minutes. Fluff the rice with a fork and stir in cilantro, lime juice, and salt.

Garlicky Grilled Shrimp

    Prepare the Shrimp

    In a bowl, combine shrimp, minced garlic, olive oil, paprika, salt, and pepper. Toss until shrimp are well coated and marinate for at least 15 minutes.

    Grill the Shrimp

    Preheat the grill to medium-high heat. Thread shrimp onto skewers and grill for 2-3 minutes on each side until opaque and cooked through.

Shaved Cabbage Slaw

    Prepare the Slaw

    In a bowl, combine sliced cabbage, grated carrot, apple cider vinegar, and salt. Toss to combine and let it sit for 10 minutes to soften the cabbage.

Roasted Tomatoes

    Roast the Tomatoes

    Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil and salt. Spread on a baking sheet and roast for 15-20 minutes until they start to burst.

Garlic Aioli

    In a small bowl, mix together mayonnaise, minced garlic, lemon juice, and salt until smooth.
