Prepare the Tartar Sauce
In a bowl, mix together mayonnaise, chopped dill, chopped parsley, lemon juice, and garlic powder. Stir well and refrigerate until ready to serve.

Prepare the Fries
If using frozen fries, cook according to package instructions. If making homemade fries, cut potatoes into sticks, soak in water for 30 minutes, rinse, and then fry in hot oil until golden brown.

Make the Batter
In a large bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Slowly pour in beer and mix until smooth.

Fry the Fish
Heat oil in a deep fryer or heavy pot to 350°F (175°C). Dip each cod fillet into the batter, allowing excess to drip off, and carefully place in the hot oil. Fry until golden brown and cooked through, about 4-5 minutes per side. Remove and let drain on paper towels.

Serve
Plate the crispy fish alongside the fries and serve with the herbed tartar sauce on the side.
