Cooking Directions
- 1
Prepare the Onions
Slice the onion into thin rings. In a skillet over medium heat, melt 1 tablespoon of butter and add the onion. Sauté until caramelized, about 10-15 minutes, stirring occasionally.
- 2
Make the Special Sauce
In a bowl, combine mayonnaise, ketchup, Dijon mustard, chopped pickles, garlic powder, and onion powder. Mix until well blended and set aside.
- 3
Form the Patties
Divide the ground beef into 4 equal portions (4 oz each) and gently form them into balls. Do not overwork the meat.
- 4
Cook the Patties
Heat a skillet or griddle over high heat. Place two meatballs in the skillet and smash them down with a spatula until they are about 1/4 inch thick. Season with salt and pepper. Cook for about 2-3 minutes until browned, then flip and place a slice of cheese on each patty. Cook for another 1-2 minutes until the cheese is melted. Remove and repeat with the remaining two patties.

Assemble the Burgers
Spread the special sauce on the bottom bun, add shredded lettuce, place the double patties with melted cheese on top, add caramelized onions, and tomato slices. Top with the other half of the brioche bun.
