Prepare the crust
Preheat the oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form an even crust.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add in the sour cream, vanilla extract, and eggs, one at a time, mixing until fully incorporated.

Bake the cheesecake
Pour the cheesecake filling over the prepared crust. Bake in the preheated oven for about 60-70 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour.

Chill the cheesecake
Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.

Prepare the burnt sugar topping
Once chilled, sprinkle an even layer of brown sugar over the top of the cheesecake. Using a kitchen torch, carefully melt the sugar until it forms a crispy layer. Allow to cool for a few minutes.

Prepare the whipped cream
In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.

Serve
Slice the cheesecake and serve with fresh berries and a dollop of vanilla whipped cream on top.
