Smashed and Seasoned
Once the potatoes are cooked, drain them and let them cool slightly. Place them on a baking sheet lined with parchment paper. Using a fork or potato masher, gently smash each potato to about ½ inch thickness. Drizzle olive oil over the smashed potatoes, and season with salt and black pepper.

Bake Until Crispy
Bake the smashed potatoes in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy.

Add Cheese and Toppings
Remove the potatoes from the oven, sprinkle shredded cheddar cheese generously on top of each potato, and return them to the oven for another 5 minutes, or until the cheese is melted and bubbly.

Serve
Once the cheese is melted, remove the potatoes from the oven. Top each potato with a dollop of sour cream, crumbled bacon, and chopped chives. Serve immediately and enjoy your crispy smashed loaded potatoes!
