Brine the Chicken
In a bowl, combine buttermilk, salt, black pepper, and paprika. Add chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or ideally overnight.

Prepare the Slaw
In a mixing bowl, combine shredded cabbage, shredded carrot, mayonnaise, sriracha, honey, and rice vinegar. Toss well to combine and set aside in the refrigerator.

Bread the Chicken
In a shallow dish, mix flour and cornstarch. Remove chicken from the buttermilk brine, allowing excess to drip off, then dredge in the flour mixture, pressing lightly to adhere.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken breasts for 5-7 minutes on each side until golden brown and cooked through. Remove and let drain on paper towels.

Toast the Buns
While the chicken is draining, toast the brioche buns in the skillet until golden brown.

Assemble the Sandwich
Spread Boom Boom Sauce (or your preferred spicy sauce) on the bottom half of each toasted bun. Place the crispy chicken breast on top, followed by a generous portion of sweet and spicy slaw and dill pickle slices. Top with the other half of the bun and serve.
