Cauliflower Parmigiana and Linguine Marinara

Preparation and Cooking

Prepare the Cauliflower
Preheat the oven to 400°F (200°C). Cut the cauliflower into florets and steam for about 5 minutes until just tender. Allow to cool slightly.

Bread the Cauliflower
Dip each cauliflower floret first in flour, then in the egg, and finally coat with breadcrumbs. Place on a baking sheet lined with parchment paper.

Bake the Cauliflower
Drizzle the breaded cauliflower with olive oil and bake in the preheated oven for 20-25 minutes until golden and crispy.

Cook the Linguine
While the cauliflower is baking, cook the linguine according to package instructions until al dente. Drain and set aside.

Assemble the Dish
In a baking dish, spread 1 cup of marinara sauce. Layer the crispy cauliflower on top, cover with the remaining marinara sauce, and sprinkle with mozzarella and Parmesan cheese.

Melt the Cheese
Return the dish to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

Serve the cauliflower parmigiana hot over a bed of linguine, garnished with fresh basil.
