Preparing the Burrito Filling

    Cook the Meats

    In a skillet over medium heat, cook the chorizo until browned, about 5 minutes. Remove and set aside. In the same skillet, cook the bacon until crispy. Drain excess fat.

    Scramble the Eggs

    In a bowl, whisk the eggs and season with salt and pepper. Pour into the skillet and scramble until just set. Mix in the chorizo and bacon.

    Assemble the Burrito

    Lay a tortilla flat and add a portion of the egg mixture, cheddar cheese, diced avocado, and pico de gallo. Roll up tightly and repeat with remaining tortillas.

Making the Roasted Jalapeño Crema

    Roast the Jalapeños

    Under a broiler or on a grill, roast the jalapeños until charred on all sides. Remove, cool, and chop.

    Blend the Crema

    In a blender, combine sour cream, roasted jalapeños, and lime juice. Blend until smooth. Adjust seasoning to taste.

Cooking the Breakfast Potatoes

    Dice the potatoes into small cubes. Toss with olive oil, salt, pepper, and paprika.

    In a skillet over medium-high heat, cook the potatoes until golden and crispy, about 15-20 minutes.
