Cooking Instructions

  1. 1

    Prepare the Sauce

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in the Calabrian chili paste and canned diced tomatoes. Season with salt and black pepper. Simmer for about 15 minutes until thickened.

  2. 2

    Prepare the Salad

In a large bowl, combine arugula and thinly sliced fennel. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to combine.

  3. 3

    Cook the Branzino

Preheat the grill to medium-high heat. Rub the branzino with the remaining olive oil and season with salt and black pepper. Place the fish on the grill and cook for about 6-8 minutes per side, or until the flesh is opaque and flakes easily.

  4. 4

    Char the Lemon

While the fish is grilling, place the lemon halves cut-side down on the grill and char for about 2-3 minutes until caramelized.

  5. 5

    Serve

On a serving plate, place the grilled branzino and spoon the Calabrian tomato sauce over the top. Serve with the arugula fennel salad on the side and charred lemon for squeezing.
