    Slow Cook the Birria

    In a slow cooker, combine the brisket, birria seasoning, and beef broth. Cook on low for 8 hours or until the brisket is tender. Shred the meat and set aside.

    Prepare Breakfast Potatoes

    Dice the potatoes and toss them in olive oil, salt, and pepper. Roast in an oven at 400°F (200°C) for about 25-30 minutes or until crispy.

    Make Chipotle Hollandaise Sauce

    Prepare hollandaise sauce according to package instructions, whisking in chipotle in adobo sauce for flavor.

    Poach the Eggs

    Bring a pot of water to a simmer and poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny.

    Assemble the Benedict

    Toast the English muffins and layer with shredded brisket, melted Mexican cheese, poached eggs, and drizzle with chipotle hollandaise sauce. Serve with breakfast potatoes on the side.
