Cooking the Ribs

Prepare the Ribs
Preheat your smoker to 225°F (107°C). Remove the membrane from the back of the ribs and trim excess fat.

Season the Ribs
In a small bowl, mix the smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper. Rub this mixture all over the ribs.

Smoke the Ribs
Place the ribs in the smoker, bone side down. Smoke for 3 to 4 hours, or until the meat is tender and pulls away from the bone.

Preparing the Mexican Street Corn

Cook the Corn
Boil or grill the corn on the cob until tender, about 10 minutes.

Prepare the Topping
In a bowl, mix the cotija cheese, mayonnaise, lime juice, chili powder, and chopped cilantro.

Spread the cheese mixture over the corn and sprinkle with salt to taste.

Bake or fry the frozen French fries according to package instructions until golden and crispy. Season with salt to taste.
