Season the Fries
In a large bowl, toss the dried potato fries with olive oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

Make the Alfredo Sauce
In a saucepan over medium heat, melt the butter. Add the heavy cream and bring to a simmer. Stir in the garlic powder and gradually whisk in the Parmesan cheese until the sauce is smooth.

Once the fries are done baking, remove them from the oven and drizzle the Alfredo sauce over the fries. Drizzle with truffle oil and sprinkle with chopped chives.
