Prepare sugar-lime-mint

In a sturdy highball or Collins glass, add 2 tsp granulated sugar and 1 oz fresh lime juice. Add 8–10 fresh mint leaves (reserve 1 sprig for garnish). Using a muddler or the back of a spoon, gently muddle the mint into the sugar and lime just enough to bruise the leaves and release the oils — do not pulverize to avoid bitter flavors.

Add rum and ice

Pour 2 oz white rum into the glass. Fill the glass about two-thirds with crushed ice or small cubes (approximately 1 cup). Stir vigorously for about 10–15 seconds to dissolve the sugar and chill the mixture; this integrates the mint, lime and rum.

Top with club soda

Top the drink with about 3 oz of club soda (adjust to taste). Give a gentle, brief stir from bottom to top to lift mint leaves through the drink and evenly distribute the soda without flattening the carbonation.

Garnish & Serve

Add a fresh mint sprig and a lime wheel or wedge to the rim or float on top. Optionally slap the mint sprig between your hands once and place it atop the drink to release extra aroma. Serve immediately with a straw.
