Cocktail assembly (per serving)
Prepare glass
Select a large wine glass or coupe and chill it briefly if desired (run under cold water and shake out or leave in freezer 5–10 minutes).
Add ice
Fill the glass about three-quarters full with fresh ice (approximately 1 cup). The ice keeps the bubbles lively and the cocktail cool without diluting too fast.
Pour limoncello
Measure and pour 2 fl oz (about 60 ml) of well-chilled limoncello over the ice.
Add Prosecco
Slowly add 3 fl oz (about 90 ml) of chilled Prosecco. Pour gently down the side of the glass or over the back of a spoon to preserve effervescence.
Top with soda
Add 1 fl oz (about 30 ml) of chilled soda water to brighten and lengthen the drink. Stir gently once with a bar spoon (one slow lift-turn) to combine; avoid vigorous stirring to keep bubbles.
Tasting and adjustments
If the cocktail is too sweet, increase soda water by 0.5 fl oz or reduce limoncello by 0.5 fl oz. If too dry or weak, add 0.5 fl oz limoncello or slightly less Prosecco.
Batch assembly (4 servings)
Chill a pitcher or large mixing jug in the refrigerator for 10–15 minutes before assembling to keep the drink cold.
Add 8 fl oz limoncello and 12 fl oz Prosecco to the chilled pitcher. Gently stir once or twice to mix; do not over-stir to preserve carbonation.
Just before serving, add 4 fl oz chilled soda water and ice (about 4 cups) to individual glasses or the pitcher as desired. If adding soda to the pitcher, add it last and stir very gently.
