Preparation
Chill glassware
Place a large wine glass or stemmed glass in the freezer for 5–10 minutes or fill with ice water while preparing ingredients to ensure the spritz stays cold.
Muddle & Mix
In the chilled glass, add the fresh mint leaves and gently slap them between your palms to release aromas. Drop the mint into the glass and add the lime juice and elderflower syrup.
If you prefer a slightly sweeter Hugo, add the optional 0.25 oz simple syrup now. Use a spoon to gently stir and coax the mint oils into the syrup and lime mixture — do not over-muddle; you want aroma, not bitterness.
Build the Spritz
Fill the glass about three-quarters full with large ice cubes to keep dilution minimal and preserve effervescence.
Top with chilled soda water (1 oz) to add lift and a light finish. Give one gentle stir to combine.
Garnish & Serve
Garnish with a fresh lime wheel or wedge on the rim and tuck a mint sprig into the glass for aroma. Optionally bruise a mint sprig and place it on top for an extra aromatic burst.
Serve immediately with a straw or cocktail pick. Encourage guests to sip slowly to enjoy the aromatic topnotes.
