Cocktail

   Prepare the rim

   On a small plate combine celery salt, coarse black pepper and fine sea salt. Run the lime wedge around the outside rim of a tall highball or Collins glass to moisten. Roll the rim of the glass in the salt-pepper mixture until evenly coated.

   Build the drink

   Fill the prepared glass with ice cubes to the top. In the glass (or a mixing glass if you prefer) add 1.5 oz vodka, 4.5 oz Clamato juice, 2 dashes Worcestershire sauce, 2 dashes hot sauce, and 0.5 oz freshly squeezed lime juice.

   Mix

   Stir the mixture gently but thoroughly with a bar spoon (about 10–15 seconds) to combine and chill. Taste and adjust seasoning: add another dash of hot sauce or Worcestershire if you prefer more heat or umami.

   Garnish and serve

   Garnish with a celery stalk and a lime wedge on the rim. Optionally spear a cooked cocktail shrimp or a crisp bacon strip and rest it on the rim or in the drink. Serve immediately with a straw.
