Preparing Chorizo

Cook the Chorizo
In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes, breaking it apart with a spatula until it is browned and cooked through. Drain excess fat if necessary.

Combine the Cheeses
In a mixing bowl, combine the Chihuahua cheese, Monterey Jack cheese, and cream cheese. Mix well until the cheeses are evenly distributed.
Baking

Bake the Queso Fundido
Preheat your oven to 375°F (190°C). In a baking dish, layer half of the cheese mixture, followed by the cooked chorizo. Top with the remaining cheese mixture. Bake for 15-20 minutes, or until the cheese is melted and bubbly.

Serve and Garnish
Remove from the oven and let cool slightly. Garnish with fresh cilantro, diced jalapeños, and a dollop of sour cream. Serve immediately with warm corn tortillas.
