Roasted eggplant & main

    Preheat and prepare eggplant

    Preheat oven to 425°F (220°C). Line a baking sheet with parchment or lightly oil it. Trim the stem ends of the eggplants and slice each eggplant lengthwise into 3/4–1 inch thick slabs. If eggplants are very large, you may cut into rounds instead.

    Brush both sides of the eggplant slices with 2 tablespoons olive oil and season with 1 teaspoon salt and 1/2 teaspoon black pepper. Arrange in a single layer on the prepared baking sheet, skin side down where possible.

    Roast in the preheated oven for 20–25 minutes, until flesh is very tender and edges are caramelized. For extra char, place under the broiler for 1–2 minutes at the end, watching carefully to avoid burning. Remove from oven and set aside to cool slightly.

Miso tahini sauce

    While eggplant roasts, make the sauce. In a bowl whisk together 1/2 cup tahini and 1 tablespoon white miso until smooth. The mixture will thicken; add 2 tablespoons lemon juice and 3 tablespoons warm water and whisk to reach a pourable but creamy consistency. Add minced garlic, 1 teaspoon maple syrup (or honey) and 1/4 teaspoon salt. Taste and adjust: add more lemon if you want brighter acidity, more water if too thick, or a pinch more miso for savoriness.

    If the tahini seizes or is grainy, continue adding warm water 1 teaspoon at a time while whisking until smooth.

Spiced walnuts

    Toast walnuts in a small skillet over medium heat with 1 teaspoon butter or olive oil for 1–2 minutes until fragrant. Add 1 teaspoon brown sugar, 1/4 teaspoon smoked paprika, 1/4 teaspoon ground cumin, 1/4 teaspoon Aleppo pepper, and 1/4 teaspoon salt. Stir constantly for 1–2 minutes more so spices lightly caramelize and coat the nuts. Remove from heat and transfer to a small bowl to cool; they will crisp as they cool.

Assembly & garnish

    Arrange the roasted eggplant slices on a serving platter while still slightly warm.

    Drizzle or spoon miso tahini sauce over the eggplant slices — aim for a thin ribbon so the eggplant remains the star (about 3–4 tablespoons of sauce used here, reserve any extra for another use).

    Nestle halved pitted dates between the eggplant slices and scatter the spiced walnuts on top.

    Sprinkle the chopped parsley and optional mint over the dish. Finish with a light dusting (about 1/2 teaspoon) of Aleppo pepper, a drizzle of 1 tablespoon extra-virgin olive oil, and a sprinkle of toasted sesame seeds if using.

    Serve warm or at room temperature with lemon wedges on the side for those who want extra brightness. Leftovers keep covered in the fridge for up to 2 days; reheat gently or serve chilled.
