Breakfast Potatoes

Method

Omelette Preparation

  1. 1

    Whisk the Eggs

In a bowl, crack the 3 eggs and whisk until fully combined. Season with salt and pepper to taste.

  2. 2

    Cook the Fillings

In a non-stick skillet over medium heat, add a little oil and sauté your chosen fillings (ham, peppers, onions, spinach, etc.) until softened, about 3-5 minutes.

  3. 3

    Add Eggs

Pour the whisked eggs over the sautéed fillings, tilting the pan to evenly distribute the eggs.

  4. 4

    Cook the Omelette

Let the omelette cook undisturbed for about 2-3 minutes until the edges begin to set. Sprinkle cheddar cheese on top.

  5. 5

    Fold and Serve

Using a spatula, gently fold the omelette in half and slide it onto a plate. Serve immediately.

Breakfast Potatoes Preparation

  1. 6

    Prepare Potatoes

Wash and dice the potatoes into small cubes. Leave the skin on for extra texture.

  2. 7

    Season and Cook

In a mixing bowl, toss the diced potatoes with olive oil, salt, black pepper, paprika, and garlic powder. Spread them evenly on a baking sheet.

  3. 8

    Bake

Preheat your oven to 425°F (220°C) and bake the potatoes for 25-30 minutes or until golden and crispy, stirring halfway through.
