    Prepare the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt or barnacles. Remove any beards and discard any mussels that are open and do not close when tapped.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallots. Sauté until fragrant and the shallots are translucent, about 3-4 minutes.

    Add Wine and Mussels

    Pour in the Chablis white wine and bring to a simmer. Add the cleaned mussels to the pot, stirring to coat them in the wine and aromatics.

    Steam the Mussels

    Cover the pot with a lid and let the mussels steam for about 5-7 minutes, or until they have opened up. Discard any mussels that remain closed.

    Finish with Parsley

    Remove the pot from heat. Stir in the chopped parsley and season with salt and black pepper to taste.

    Serve the steamed mussels hot, with the broth spooned over them. Enjoy!
