Prepare the Ingredients
Preheat your oven to 375°F (190°C). Peel the outer skin of the Vidalia onions and cut the tops off, making sure to keep them whole.

Season the Pork Belly
Rub the pork belly with olive oil, salt, and black pepper. Place it in a roasting pan and set aside.

Prepare the Onions
Drizzle the Vidalia onions with olive oil, sprinkle with salt and pepper, and place them around the pork belly in the roasting pan.

Roasting
Roast the pork belly and onions in the preheated oven for about 1 hour, or until the pork is tender and the onions are caramelized.

Add the Cheese
In the last 10 minutes of roasting, sprinkle the Wisconsin blue cheese crumbs over the onions and pork belly.

Remove from the oven, garnish with fresh thyme, and let it rest for a few minutes before serving.
