Prepare the Whipped Potatoes
Peel and chop the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add heavy cream, salt, and pepper, and mash until smooth. Keep warm.

Cook the Broccolini
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic broccolini and sauté for about 5-7 minutes until tender. Season with salt and pepper. Set aside.

Prepare the Smoked Hollandaise
In a heatproof bowl, whisk together egg yolks and Meyer lemon juice. Place the bowl over a pot of simmering water (double boiler). Whisk constantly until the mixture thickens. Gradually whisk in melted butter and smoked paprika. Remove from heat and keep warm.

Pan-Sear the Salmon
Season the salmon fillets with salt and black pepper. In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Place the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes until the salmon is cooked through.
