    Cook the Linguine

    In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté Vegetables

    In a large skillet, heat the Georgia olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the asparagus, zucchini, yellow squash, and English peas. Cook for about 5-7 minutes until vegetables are tender.

    Add Spinach and Tomatoes

    Stir in the fresh spinach and cherry tomatoes. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes are slightly softened.

    Combine Pasta and Gremolata

    Add the cooked linguine to the skillet with the vegetables. Pour in reserved pasta water as needed to create a light sauce. Stir in the lemon juice, lemon zest, and season with salt and black pepper to taste.

    Serve

    Divide the pasta among serving plates and top with grated pecorino cheese. Serve immediately.
