    Make the Biscuits

    Preheat the oven to 425°F (220°C). In a large bowl, combine the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough out onto a floured surface and knead gently. Pat into a 1-inch thick round. Cut out biscuits using a biscuit cutter and place in a cast iron skillet.

    Bake the Biscuits

    Bake in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

    Prepare the Gravy

    In a skillet, cook the sausage over medium heat until browned. Sprinkle the flour over the sausage and stir well to combine. Gradually whisk in the milk, cooking until thickened. Season with black pepper.

    Cook the Eggs

    In a separate pan, cook the cage-free eggs sunny side up to your liking.

    Assemble

    Place the warm biscuits on a plate, top with sausage gravy, and add the sunny side up egg on top.
