Crispy Cauliflower
Method
Preparation and Cooking
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- 2
Prepare the Cauliflower
Cut the cauliflower into bite-sized florets and place them in a large bowl.
- 3
Coat the Cauliflower
In a separate bowl, mix the rice flour, cornstarch, Cajun seasoning, salt, and black pepper. Drizzle the olive oil over the cauliflower florets, then sprinkle the dry mixture over them. Toss until all florets are evenly coated.
- 4
Bake the Cauliflower
Spread the coated cauliflower evenly on the prepared baking sheet. Bake for 25-30 minutes, or until golden and crispy, flipping halfway through.
- 5
Prepare the Chili-Pecan Crisp
In a small skillet, toast chopped pecans over medium heat until fragrant. Add chili powder and a pinch of salt, stirring to combine. Cook for an additional 1-2 minutes, then remove from heat.
- 6
Serve
Serve the crispy cauliflower topped with the chili-pecan crisp and a dollop of coconut yogurt.
