Prepare the Beans

Wash the fresh wax beans thoroughly. Trim the ends and cut them into halves if they are long.

Make the Brine

In a saucepan, combine white vinegar, water, sugar, salt, black peppercorns, mustard seeds, and red pepper flakes. Bring the mixture to a boil over medium heat, stirring until the sugar and salt are dissolved.

Pack the Jars

In sterilized canning jars, layer the wax beans, minced garlic, and chopped dill. Leave about half an inch of space at the top of the jars.

Add the Brine

Pour the hot brine over the packed beans in the jars, ensuring they are fully submerged. Wipe the rims of the jars with a clean cloth to remove any residue.

Seal and Process

Seal the jars with lids and process them in a boiling water bath for 10 minutes. Remove from the water and let cool completely.

Store

Once cooled, check the seals on the jars. Store in a cool, dark place for at least 24 hours before opening for the best flavor.
