Cooking Instructions

  1. 1

    Prepare the Grits

In a saucepan, bring 4 cups of water to a boil. Stir in the jalapeño grits and cook according to package instructions until creamy. Stir in a pinch of salt and set aside.

  2. 2

    Cook the Sausage

In a large skillet, heat the olive oil over medium heat. Slice the andouille sausage into bite-sized pieces and add to the skillet. Cook until browned and heated through, about 5-7 minutes.

  3. 3

    Scramble the Eggs

In a bowl, whisk the eggs with salt and black pepper. Pour the egg mixture into the skillet with the sausage and cook, stirring gently, until the eggs are just set.

  4. 4

    Combine and Serve

Divide the jalapeño grits among serving plates. Top with the sausage and egg scramble. Spoon green tomato relish over the top and garnish with fresh parsley before serving.
