Method

Ribs Preparation

  1. 1

    Prepare the Ribs

Preheat your oven to 300°F (150°C). In a bowl, mix honey, soy sauce, garlic powder, onion powder, black pepper, paprika, and salt. Coat the ribs with this mixture and place them on a baking sheet lined with foil. Cover with another piece of foil and bake for 2.5 to 3 hours.

  2. 2

    Glaze the Ribs

After baking, remove the top foil and brush more honey mixture over the ribs. Increase the oven temperature to 400°F (200°C) and bake uncovered for an additional 15-20 minutes until caramelized.

Rice Preparation

  1. 3

    Cook the Rice Middlins

In a saucepan, combine rice middlins, water, and salt. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until the rice is tender and the water is absorbed.

Salad Preparation

  1. 4

    Make the Pineapple-Cucumber Salad

In a bowl, combine diced pineapple, cucumber, red onion, cilantro, lime juice, and salt. Toss gently to mix and set aside.

Dressing Preparation

  1. 5

    Prepare the Roasted Peanut Dressing

In a bowl, whisk together chopped roasted peanuts, soy sauce, sesame oil, honey, and rice vinegar until smooth.
