Benne Seed Crusted Ahi Tuna

Method

Preparation Instructions

  1. 1

    Prepare the Ahi Tuna

Season the Ahi tuna steaks with salt and black pepper. Press benne seeds onto both sides of the tuna to create a crust.

  2. 2

    Make the Beer Batter

In a bowl, whisk together the flour and beer until smooth. The batter should be thick enough to coat the back of a spoon.

  3. 3

    Fry the Avocado

Slice the avocado into wedges, dip them into the beer batter, and deep fry until golden brown. Drain on paper towels.

  4. 4

    Cook the Tuna

Heat olive oil in a skillet over medium-high heat. Sear the crusted tuna steaks for about 1-2 minutes on each side for rare. Adjust cooking time for desired doneness.

  5. 5

    Make the Jalapeño Mayo

In a bowl, mix mayonnaise with finely chopped jalapeño until well combined.

  6. 6

    Prepare Chive Vinaigrette

In a small bowl, mix chopped chives with lemon juice, olive oil, salt, and pepper.

  7. 7

    Plating

Slice the tuna and serve it on a plate with beer-battered avocado wedges. Drizzle with jalapeño mayo and chive vinaigrette. Top with tobiko for added texture and flavor.
