    In a large bowl, combine the ground pork shoulder and pork fat. Mix well.

    Add minced garlic, paprika, cayenne pepper, black pepper, salt, and thyme to the meat mixture. Mix thoroughly until all spices are evenly distributed.

    Stuff the Sausage

    Rinse the sausage casings in cold water and soak them in warm water for about 30 minutes. Stuff the casings with the meat mixture, being careful not to overfill. Tie off the ends of the casings.
